From Oosakazuki’s bold “Macho” series comes this Koshu-style Kimoto Junmai, brewed using only wild, naturally occurring yeast from within the brewery. No cultured yeast is added, allowing resilient native yeast to develop over an extended 50-day fermentation—far longer than standard methods.
Crafted using a traditional kimoto method and a low polishing ratio of 90%, this sake embraces a high-protein profile to deliver deep, complex umami with a sharp, cutting acidity. What is often considered “roughness” becomes part of its character, resulting in a rich, expressive, and highly distinctive flavour.
Despite its technical, old-style approach, the balance of boldness and clean finish makes it surprisingly approachable. True to the Macho series philosophy, it challenges conventional expectations while remaining dangerously drinkable.
