From Oosakazuki’s iconic “Macho” series comes its most extreme and highest-grade expression to date. This limited “Magistrate Label” release recreates a brewing method recorded in the Edo-period encyclopedia Wakan Sansai Zue, bringing historical techniques into a modern context.
Brewed using a kimoto-style starter without added cultured yeast and an unusually high water ratio—approximately three times that of standard brewing—this sake achieves a uniquely rich and unconventional profile. It stands apart from styles like kijoshu or high-koji brewing, offering instead a bold, deeply concentrated character.
With an extraordinary SMV of -88 and high acidity of 4.3, this sake delivers an intensely full-bodied experience with powerful sweetness, depth, and structure. Made with Miyama Nishiki polished to 90%, it fully embodies the Macho series philosophy of breaking traditional boundaries while showcasing technical mastery.
